Kuah beulangong is a typical cuisine of the people of Banda Aceh and Aceh Besar. This is kind of meat curry cooked with a variety of Acehnese spices. Unlike most of curries, kuah beulangong is cooked without using coconut milk.
Kuah beulangong has been around for hundreds of years. This dish is always served during the major celebrations such as Maulid, Islamic New Year, and weddings.
To maintain and uplift the taste of the richness typical culinary of Banda Aceh and Aceh Besar, the DPRK Chairperson of Banda Aceh, Arief Fadillah held kuah beulangong cooking competition, on Sunday (25th November 2018) at Bustanussalatin park, Banda Aceh.
The competition was attended by ten teams from each village in Baiturrahman Subdistrict, plus two honorary teams from Bandar Raya Subdistrict, namely Gampong Lampuet and Zul Arafah Islamic Studies Congregation team.
Arif Fadillah is inspired by other culinary delights outside Aceh such as rendang, which was already well-known to foreign countries, and even received recognition from UNESCO. Therefore, he aspires propose kuah beulangong to UNESCO as one of the national cultural heritage originating from Aceh.
Arif also hopes that this event will take part of the Banda Aceh City Government agenda to seriously uplift the taste of kuah beulangong.
“This competition can unite the people around Baiturrahman and the Banda Aceh city area. From these activities, residents can exchange their dishes with each other and enjoy the curry together, “said Arif Fadillah.
Zul Arafah Islamic Studies Congregation team as the winner
Zul Arafah Islamic Studies Congregation team from Banda Raya Sub-district, Banda Aceh, won the kuah beulangong cooking competition from all Baiturrahman District participations, which held by the DPRK Chairperson.
In that Aceh culinary cooking contest, the Zul Arafah team received the most scores from the jury with a total of 880 points, then followed by the Gampong Baro team 870 points as second winner, then third place from Peuniti Village with the acquisition of 850 points.
Chef Mulyadi from Best Western Hotel Jakarta, one of the judges, in the event said several categories that were assessed by the jury, namely taste, cleanliness and teamwork. One team consists of five people.
“In the future, the participants must also see uniformity. Participants are not careless. Then for cleanliness not only from the workplace but also from the participants’ personalities, such as not smoking while cooking. Moreover, this is a competition. It includes as assessment, “he said.
Abu Usman, another jury known as a kuah beulangong expert, said that in the competition the participants were given two hours of cooking time. Starting from preparing the ingredients and spices to serving dishes.
Cooking kuah beulangong is a symbol of togetherness for Aceh people. The process of processing traditional Tanah Rencong culinary has involved cooperation and togetherness since beginning. The cool part is the cooking process all done by men.
